Chicken Satay with Peanut sauce

Course Starter

Ingredients
  

  • 350 g smooth peanut butter
  • 100 ml Kikkoman soy
  • 5 tblsp lemon juice
  • 5 tblsp sesame oil
  • 3 pcs stem ginger
  • 3 tblsp ginger syrup
  • 2 chilli – chopped
  • 2 cloves garlic
  • 100 ml water
  • 100 g chicken breast cut into long strips
  • 10 g ginger roughly chopped
  • 1 tsp turmeric
  • 1 chilli roughly chopped
  • 25 ml soy sauce
  • 1 tblsp honey
  • 2 tblsp coconut milk
  • Bamboo skewers

Instructions
 

  • Combine the peanut butter, soy, lemon juice, sesame oil, stem ginger & syrup, chilli, garlic & water in a blender & puree until smooth.
  • Mix the rest of the ingredients together. Marinate chicken in mixture. Thread chicken onto skewers. Season with salt and pepper and grill over hot coals or grill. Serve with a ramekin of peanut sauce, some picked coriander and a wedge of lime.
