Combine the peanut butter, soy, lemon juice, sesame oil, stem ginger & syrup, chilli, garlic & water in a blender & puree until smooth.
Mix the rest of the ingredients together. Marinate chicken in mixture. Thread chicken onto skewers. Season with salt and pepper and grill over hot coals or grill. Serve with a ramekin of peanut sauce, some picked coriander and a wedge of lime.
