
Chicken Satay with Peanut sauce
Ingredients
- 350 g smooth peanut butter
- 100 ml Kikkoman soy
- 5 tblsp lemon juice
- 5 tblsp sesame oil
- 3 pcs stem ginger
- 3 tblsp ginger syrup
- 2 chilli – chopped
- 2 cloves garlic
- 100 ml water
- 100 g chicken breast cut into long strips
- 10 g ginger roughly chopped
- 1 tsp turmeric
- 1 chilli roughly chopped
- 25 ml soy sauce
- 1 tblsp honey
- 2 tblsp coconut milk
- Bamboo skewers
Instructions
- Combine the peanut butter, soy, lemon juice, sesame oil, stem ginger & syrup, chilli, garlic & water in a blender & puree until smooth.
- Mix the rest of the ingredients together. Marinate chicken in mixture. Thread chicken onto skewers. Season with salt and pepper and grill over hot coals or grill. Serve with a ramekin of peanut sauce, some picked coriander and a wedge of lime.
